Why is there blue/purple ink on my meat?

KOL Foods meat is all USDA inspected. To indicate that a particular carcass is USDA approved, they often use stamps on the meat itself. The ink used is edible and completely safe; it can sometimes stain the meat and bones it comes into contact with but this is nothing to be concerned with. It should not discolor any broth or meal you make with it either.
